Things I Ate Today: Thanksgiving 2011

Wheat-free banana bread (based on this recipe but with 3 whole eggs, coconut oil for the olive and 1/2 the sugar) coconut milk french toast, with a side of sausage & eggs

Loaded baked potato: cheese, bacon, sauteed spinach, garlic, wheat-free biscuits with sweet potato butter

I found out I am allergic to wheat in August. The hardest thing since then has been the loss of biscuits which I used to make about 1-2x a week. I tried making them with almond flour, coconut flour, Bob’s Red Mill mix–nothing tasted like biscuits. I thought I would have to live life without them so I have tears in my eyes right now–actual tears–that the ones I just made with your baking mix taste “real.” You’ve given me a part of my culinary heritage back to me. Thank you thank you thank you.
