Roasted eggplant something :)

One whole eggplant, sliced

Appx. 10 baby heirloom tomatoes, halved (I meant to have more but unfortunately, most of them molded)

4 cloves of garlic, diced

Mushroom broth, I have no idea how much, maybe 1/2 cup

Olive oil

S + P

375 for 40 minutes, then added parmesan and pecorino and cooked an additional 10

The first 20 minutes it cooked it didn’t have any broth in it so maybe if I had added that to begin with, it wouldn’t have taken as long.

In any case, DELICIOUS.
