I made these at work last night.
Graham Cracker Crust:
12 graham crackers, smashed by hand (because I couldn’t figure out the food processor)
Melted butter
Chocolate icing sugar
350-deg. oven for 8 minutes
Topping:
1/3 can of pumpkin
3 eggs
3 HEAPING spoonfuls of plain yogurt (maybe 6 tbsp?)
Organic cane sugar
Cinnamon
2 capfuls of vanilla extract
Pinch of salt
Cooking in someone else’s kitchen for the first time, I didn’t know where any of her measuring devices were so I eyeballed everything.
350-deg. oven for 20 minutes, then turned the oven off and let them stay in an additional 7 minutes
They loved them. 🙂
